SOURDOUGH RANGER BISCUITS

1 1/2 cups sourdough starter
1 1/2 cups sifted flour
3 tsp. baking powder
11/2 tsp. baking soda
2 Tbs. sugar
114 cup melted shortening
1 tsp. salt

Place flour in a large bowl making a hole in the middle. Add starter to the flour hole. Add melted shortening and dry in- gredients. Mix from the middle, stirring in enough flour to make a soft dough. Turn out onto a lightly floured board; knead until the consistency of bread dough or a satin finish. Pat or roil out to 1/2-inch thickness. Cut with biscuit cutter and place in warm greased Dutch oven coating both sides of biscuit with grease. let biscuits rise in Dutch oven with lid on, for 40 minutes, or double in size. Then bake at 350 degree for 25 minutes or until you can smell them. If start is very sour, throwaway and start over.

Place 2 or 3 coals on top of oven to help with rising process
